Quick Pickled Onions are a snap to make, and super handy to have around when you are on a taco kick! They only take an hour to make, and of course get better in time. I only use red onions, which turn the water pink! I’m not kidding when I say that you won’t want a taco ever again that doesn’t have these as a condiment on top.

Quick Pickled Onions

Ingredients
- 1 red onion
- 1 C apple cider vinegar
- 1.5 T sugar
- 2 tsp salt
Directions
- Step 1
- Slice onions thinly.
- Step 2
- Mix vinegar, sugar and salt in a small bowl. Add onions and let sit on the counter for an hour.
- Step 3
- Keeps in refrigerator for up to 2-4 weeks (as if!)
