My Gourmet Honey Mustard Dressing is not like anything you have in your mind about how it should taste, and certainly kicks the store-bought kind’s bootie pretty hard. Let me just say that I LOVE this dressing so much and it is so versatile. I served it to someone who stated that they didn’t like honey mustard dressing….and guess what? They loved it! The flavors are subtle and don’t stab your tongue with a mustard bite that is also overly sweet. It is very mild, and the addition of garlic, oregano, and a bit of avocado mayonnaise tames the flavors while also making it super creamy. I can’t get enough avocado oil in my diet either! And avocado oil is perfect to use in this dressing, as it actually enhances the flavor.
I have had chicken salads, salmon salads, and even seared tuna salads with this dressing on top and it compliments all of them so nicely. I love this dressing too, if you are trying to stay away from cheese piled all over your salads like I do because it doesn’t need it! I’m not bashing cheese, oh lord no! So if you are completely vegan I think you are in for a treat because this dressing on top of avocado, cucumbers, tomatoes, and peppers on a bed of Spring greens is so dang satisfying!

It is really important to use Dijon Mustard in this recipe. The honey is measured in equal portions as the mustard.

These ingredients are so healthy – and probably ingredients you already have in your refrigerator. I love Bragg’s Organic Apple Cider Vinegar so much. And the acidity of it in here cuts perfectly.

Then you just add a bit of mayonnaise to cream it up, along with oregano and minced garlic for some added gourmet business. Oh yeah.
Song for the Prep: Honey Power by My Bloody Valentine
This band was and is still pivotal in the ‘alternative’ music scene, or I guess rather what the ‘alternative’ stuff used to be penned as. The original alternative. This song comes from an EP they released in 1991 (oh the memories) and is streamable here.
