When I’m scrambling to get myself going and need a solid protein base to start my day, this Pesto Scramble is it. I scarf this one down a lot, for a few reasons: it is so silly-easy to make, it tastes amazing every time, and it fills me up so I can get on with my day. Want a simpler version of this? Just plop some pesto in your scrambled eggs and you too will be addicted. Especially if you use my trusted Basil Pesto Gusto recipe. I have enjoyed fresh pesto all winter with frozen pesto cubes that I froze when my garden ended its summer run last year. I’m not going to ramble on about this because I know you’re hungry, and so am I…so let’s get this day started!
Best to start some peppers in a non-stick pan, whatever color peppers you fancy. I like the orange ones the best, come on you know they are. When the peppers get a little bit soft I just love how the flavors emanate from my kitchen as I’m chugging back espresso, waiting for my breakfast!
Scramble an egg, pour it in the pan with a scoop of pesto, and BLAMMO! This takes 10 minutes from start to finish. I like to throw a bit of parmesan on top and give it another scramble in the pan…you can see it oozing a bit. I honestly just ate this and I wish I had more! Garnish with some bacon (duh) and a couple strawberries so you feel like you are restaurant quality too, and yeah who needs brunch plans during a pandemic anyway? Mmmhmmm. My favorite bacon trick does its magic in this microwavable bacon pan, and sits above all of the grease so you can have perfect bacon every time, all while you are scrambling these eggs.
Pesto Scramble

Ingredients
- 2 eggs, scrambled
- 1/2 orange pepper, chopped
- 1 tsp butter
- 1 T fresh pesto
- 2 T grated Parmesan
- Serve with strawberries and crisp bacon
Directions
- Step 1
- Plop butter in a non-stick pan and heat over medium-low heat.
- Step 2
- Add peppers and saute for 3 minutes.
- Step 3
- Pour in scrambled eggs with pesto and stir gently until they are softly scrambled, about 3 minutes.
- Step 4
- Add Parmesan until just melted and serve.

This was an easy one! My Saturday morning ritual, besides a Pesto Scramble, is listening to WFMU.org. I especially enjoy listening to the Michael Shelley show and Fool’s Paradise with Rex. I always learn something new! These deejays are like walking musical encyclopedias! I am going to go down memory lane for a minute here… when I lived in Brooklyn, NY (which is where this blog originated back in 2012 before a pretty extreme hiatus) I was introduced to this radio station that shines out of Jersey City, NJ. They had the effn coolest record fairs! Maybe they still do. I probably don’t even want to know about them because I’m halfway across the continent now. I hope you check these guys out, especially on a Saturday morning when you are making breakfast and well into the day because it keeps on rocking all day long!
