This fantastic Blue Cheese Dressing is the easiest to make, and can be used for salads, veggie dipping, chicken wing dipping, …or my naughty, carb-heavy, favorite…fresh bread dipping! I’ve been known to dip pretzels into this stuff. Or even potato chips!! It doesn’t require a blender or anything fancy, so don’t feel intimidated. You just put all of the ingredients into a bowl and start mashing the blue cheese. Do yourself a huge favor and buy a really nice blue cheese like Roquefort, which is what I used; an aged, stinky, delicious Roquefort. Believe me I have tried to cheap out on the cheese, and if it is too hard of a cheese it will be impossible to smoosh into the dressing base. You don’t want to have to get out the blender like I did that one time.
This recipe is so easy, only has a few ingredients, and tastes better than any bottled dressing in the produce aisle I’ve ever tasted. If you are trying to incorporate more veggies into your life, this is a really tasty way to do it. I could say that it will last in your fridge for 5-7 days, but it won’t last that long. I was on the keto train last summer and this was an easy way for me to get a lot of yummy fat calories into my day.

Ingredients
- 1 cup sour cream
- 1/2 cup mayonnaise
- 4 oz Roquefort cheese
- 1 T fresh squeeze lemon juice
- 2 T heavy whipping cream
- 1/2 tsp salt
- 1/4 tsp pepper

- Put all of the ingredients in a bowl and start smooshing the blue cheese. That’s IT!
